Breakfast for Dinner
By SupperScout Editorial Team · Updated October 7, 2026
Breakfast for dinner — brinner — is not giving up. It's a legitimate weeknight strategy: fast, cheap, uses what you have, and nobody is ever unhappy about pancakes at 7pm. The only trick is making it feel like dinner.
Why brinner works
Eggs + potatoes + bread = complete, cheap, fast. The ingredients are always there, the techniques are simple, and the whole thing takes 20 minutes. It's the dinner equivalent of a reliable friend — not exciting, always there when you need it.
Making it feel like dinner
Two things separate brinner from "I gave up": add something green (a side salad, sautéed spinach, sliced tomatoes) and serve it hot at the table. That's it. The same eggs eaten standing over the sink feel like failure; plated with a salad they feel like a plan.
Three brinner builds
- Egg-and-potato hash → diced potatoes crisped in a skillet, eggs cracked on top, covered 3 minutes. One pan.
- Pancakes + eggs + fruit → the classic. Box mix is fine — that's the point of brinner.
- Breakfast burritos → scrambled eggs + potatoes + cheese + salsa in tortillas. The most dinner-like of the three.
