What to Cook With Loaded Baked Potatoes

By SupperScout Editorial Team · Updated October 8, 2026

Loaded baked potatoes are the weeknight's great reset button — cheap, filling, and genuinely fun to eat. The potato itself is nearly hands-off; the real cooking is choosing the method and then building a topping bar out of whatever you already have.

Three ways to cook the potato

  • Oven (best texture): rub russets with oil and salt, bake at 425°F for 45–60 minutes until the skin crisps and a knife slides in easily. Crisp skin is the whole point — don't wrap in foil.
  • Microwave (fastest): poke holes, microwave 5 minutes, flip, 5 more, until soft. Finish 10 minutes in a hot oven if you want any crispness at all.
  • Air fryer: oiled and salted russets at 400°F for 35–40 minutes, turning once. Crisper than microwave, faster than a full oven.

The topping bar: use what you have

  • Butter + sour cream + shredded cheese + chives → the classic. Salt the inside before anything else goes on.
  • Chili or leftover taco meat → turns the potato into a full meal. Spoon it over, add cheese so it melts in.
  • Broccoli + cheese → steamed or frozen-thawed broccoli with a handful of shredded cheddar, microwaved 60 seconds to melt.
  • Breakfast-for-dinner → scrambled eggs, bacon or sausage crumbles, hot sauce. Sounds odd; works perfectly.
  • Pantry-only → butter, canned beans, salsa, and cheese. Zero fresh ingredients required.

Twice-baked with leftovers

If you have leftover baked potatoes, twice-baked is the upgrade: halve them lengthwise, scoop the flesh into a bowl, mash with butter, sour cream, cheese, and whatever filling you have, stuff it back in the skins, and bake 15 minutes at 375°F until golden on top. They also reheat better than plain baked potatoes — and they freeze well for up to 3 months.

Food-safety note

Baked potatoes are a real food-safety item: once cooked, they can't sit out. Refrigerate leftovers within 2 hours — and if you wrapped one in foil to keep it warm, take it out of the foil before it cools. Reheat to steaming hot throughout.

Frequently asked questions

How long do baked potatoes take in the oven?

45-60 minutes at 425°F for russets rubbed with oil and salt. They're done when the skin is crisp and a knife slides in with no resistance. Don't wrap in foil — it steams the skin instead of crisping it.

Can I microwave a baked potato?

Yes — poke holes, microwave about 5 minutes, flip, and go 5 more until soft. The texture is softer than oven-baked, so finish it 10 minutes in a hot oven if you want any crispness on the skin.

How do I make twice-baked potatoes?

Halve baked potatoes lengthwise, scoop the flesh into a bowl, mash with butter, sour cream, cheese, and whatever filling you have, stuff it back into the skins, and bake 15 minutes at 375°F until golden on top.

Are baked potatoes safe to leave out?

No — this one matters. Refrigerate leftover baked potatoes within 2 hours, and take them out of any foil before they cool. Reheat to steaming hot throughout.

What are the best toppings with no fresh ingredients?

Butter, canned beans, salsa, and shredded cheese needs zero fresh ingredients and eats like a full meal. Canned chili over a potato with cheese is another pantry-only winner.
