What to Put in Quesadillas

By SupperScout Editorial Team · Updated October 7, 2026

A quesadilla with only cheese is a snack. A quesadilla with cheese plus a filling is dinner. The formula never changes — tortilla, cheese (the glue), ½ cup of whatever's left, second tortilla — but the filling is where dinner happens.

The formula

Medium heat, 2–3 minutes per side, in a dry skillet or with the lightest film of oil. The cheese needs to fully melt and the tortilla needs golden spots. Low heat = steamy and soft; too high = burnt outside, cold inside. Don't overload — ½ cup of filling max, or it won't seal and won't crisp.

Filling ideas by what's left

  • Chicken + peppers → shredded rotisserie or leftover chicken with sautéed peppers and onion.
  • Beans + corn → black beans, corn, salsa, cheese. The pantry quesadilla.
  • Sweet potato + black bean → roasted or microwaved sweet potato mashed with beans and cumin.
  • Breakfast → scrambled egg + potato + cheese. Brinner in tortilla form.
  • Veggie → mushrooms + spinach + onion, cooked down first so they don't waterlog it.

The crisp secret

Two things: don't overload, and don't stack hot quesadillas — they steam each other soft. Rest them on a rack or cutting board for a minute. Pre-shredded cheese works fine here; this is not the time for cheese snobbery.

Frequently asked questions

Flour or corn tortillas?

Flour for quesadillas — they're pliable and crisp well. Corn tortillas crack when folded; save them for tacos.

What cheese melts best?

Monterey Jack, Oaxaca, or low-moisture mozzarella. Pre-shredded is fine for quesadillas.

How do I keep them crispy for later?

Cool on a rack, not stacked. Reheat in a dry skillet, not the microwave — the microwave is where crisp goes to die.
