What to Cook With Sausage and Peppers
By SupperScout Editorial Team · Updated October 7, 2026
Sausage and peppers is less a recipe than a dinner system. The pair is already a complete meal — the only real decision is the landing: hoagies, pasta, sheet pan, or over rice. Everything else is details.
Which sausage?
Italian sausage (sweet or hot) is the classic — it wants peppers, onions, and an Italian-ish landing. Smoked sausage or kielbasa is already cooked, so it's faster and leans toward sheet-pan or skillet dinners. Chicken sausage is leaner; it dries out if you treat it like pork, so keep the heat moderate and the time short.
Four landings
- Hoagies → the iconic move. Toast the rolls, melt provolone or mozzarella on top.
- Pasta → slice the sausage into coins, toss with penne and marinara or garlic-oil.
- Sheet pan → sausage + peppers + onions + potatoes at 425°F, 25 minutes, one pan.
- Over rice or polenta → the juices become the sauce. The lowest-effort landing.
Don'ts
- Don't pierce the sausage before cooking — the juices stay inside, which is the point.
- Don't crowd the peppers — they steam instead of charring. Give them space or cook in batches.
- Don't skip the onion. It sounds minor; it's doing a third of the flavor work.
